Corral Family


2 cups of flour
1 teaspoon baking powder
1 teaspoon cinnamon
teaspoon cloves
teaspoon nutmeg
teaspoon salt
cup butter
1/3 cup brown sugar
1 cup sugar
1 egg
1 teaspoon baking soda
1 cup persimmon pulp
1 teaspoon vanilla
1 cup chopped walnuts
1 cup raisins

1. Preheat oven to 375 degrees. Grease or line two baking sheets with parchment paper and set aside.

2. In a medium bowl sift together the dry ingredients, flour, baking powder, cinnamon, cloves, nutmeg and salt; set aside.

3. In a separate bowl, cream the butter, brown sugar, sugar and vanilla with a mixer. Beat in the egg. In another bowl, combine the baking soda and pulp, then mix in with the creamed butter mixture. Slowly beat in the flour mixture until everything is combined. Then add in the walnuts, and raisins.

4. Drop by rounded spoonfuls onto lightly greased baking sheets.

5. Bake for 10-12 minutes. Let cool on baking sheets for 5 minutes and then remove.
