Jimmy Spurr's Spanish Style Chicken Recipe

1 - 2 to 3 lb fryer chicken, cut up
1 tsp salt
tsp pepper
cup chopped onion
1 cup Tomato juice
1 cup uncooked long grain rice
1-10 oz bag of frozen peas
cup chopped pimento
tsp MSG ( no longer use)
3 TB shortening
1 garlic clove, minced
2 cups chicken broth

season chicken with salt, pepper & MSG
In skillet, brown chicken in hot shortening. Add garlic &onion & cook until onion is tender but not browned. Add tomato juice & half a cup of the broth.Cover & simmer for 20 minutes.
Add rice & remaining broth. Simmer, covered, for 20 minutes
Add peas & oimiento.Simmer five minutes more or until peas are tender, stirring once or twice.
