4 lemons
4 eggs
1 lb granulated sugar
4 oz butter

Directions:
Directions:
Grate the lemon rind. Squeeze the lemon and strain the juice. Pour the juice into a bowl that is standing in the pan of hot water. Beat the eggs. Add the lemon rind, eggs, sugar and butter to the lemon juice and stir until the sugar has dissolved. Warm gently until the curd thickens. Stir and do not allow to boil. Pot in sterilized jars and seal. This does not keep longer than 1 month.
