4 or 5 baked sweet potatoes or yams (skins removed, cut into chunks)
1 cup skim or 1% milk
1 tablespoon olive oil
2 eggs
1/2 cup Sorrell Ridge Apricot or Peach or Marmalade
1/2 teaspoon cinnamon

Directions:
Directions:
In a blender place your potatoes and milk and blend until smooth. Now add all other ingredients and continue to blend until the potatoes are satin smooth. In a quart size baking dish that has been sprayed with vegetable spray pour in your soufflé and then bake in your 350 degree oven for about 1 hour. Serve hot with an extra sprinkle of cinnamon if so desired.

Prep. Time: about 1 hour to bake the potatoes and about 15 min. to prepare souffle

Cook Time: 1 hour

Preheat oven: 350 degrees

Makes 6 servings.
