½ stick of Butter
10 eggs
½ cup of Flour
1 teaspoon of Baking Powder
1 teaspoon of salt
1 regular container of Cottage Cheese
2 cups of Jack Cheese
1 can (4oz) Diced Chilies

Directions:
Directions:
Place butter in a cool casserole dish and put in the oven
Pre-heat oven to 400° - this melts the butter **Keep an eye on this so the butter does not burn

Whip eggs until they are fluffy
add in flour, baking powder, and salt

Fold in cottage cheese, jack cheese, and chilies

Bake for 15 mins at 400°

Reduce oven temp to 350° and continue to bake for 35 mins

Make that the eggs are set and there is a nice golden brown around the edges.

This is just one of many of my mother's signatures dishes - this is also one of those dishes that can be served hot, warm or room temperature.

It's perfect for a Sunday brunch, a morning meeting or an appetizer.
