Cake:
3/4 cup flour
4 eggs
3/4 cup sugar
3/4 tsp. baking powder

1 pkg Jello Lemon Pie Filling
3 tbsp. lime juice (optional)
3/4 tsp. lemon rind, grated
2 cups prepared Dream Whip

Directions:
Directions:
Cake:
Grease 15 x 40" jelly roll pan, line with parchment paper, grease and flour paper. Sift flour with baking powder. Beat eggs at high speed until foamy. Gradually add sugar and continue beating until thick and light in colour, about 5 minutes. Carefully fold in flour mixture. Pour cake batter into prepared pan. Bake at 400ºF for 12 to 15 minutes or until cake springs back. Immediately turn cake onto cloth which has been sprinkled with icing sugar. Quickly remove parchment paper. Starting with narrow end, roll cake in cloth and cool on counter 1 hour.

Filling and Frosting:
Prepare lemon pie filling as directed using 1 whole egg, 1 cup sugar and reduce water to 1½ cups. Add lime juice and rind. Chill 1 hour, set aside 1/2 of pie filling, unroll cake, spread remaining pie filling evenly over cake, re-roll. Fold reserved pie filling into prepared dessert topping, frost cake. Chill.

Personal Notes:
Personal Notes:
I didn't have a jelly roll pan so I used a cookie sheet and it worked out perfectly.
