¾ cup sherry or fruit juice
2 cup seedless raisins
Rind of 1 orange
Juice of 1 orange
4 cups shelled walnuts
4 cups flour
2 tsp baking powder
1 tsp nutmeg
6 eggs 1 cup butter
2 cup sugar
½ cup molasses
1 tsp vanilla
½ tsp salt

Preheat oven to 275º
Pour sherry over raisins – set aside while mixing cake – grate orange rind, squeeze orange for juice – sift flour – measure sift again with baking powder, salt and nutmeg – reserve ¼ of flour for flouring nuts and raisins – beat eggs until as thick as heavy cream – cream butter in another bowl, gradually work in sugar until mixture is fluffy – beat in eggs – drain raisins saving liquid – add molasses, orange juice, and drained sherry alternately with dry ingredients to creamed mixture – dredge raisins, orange rind, and nuts in reserved flour then fold into creamed mixture - stir in vanilla and spoon into a greased tube pan – bake for 2 hours
