4 pound beef or neck bones
6 cloves garlic
1 jumbo onion chopped
6 large cans tomato each (6 quarts)
4 (6 oz) cans tomato paste
2 quarts of water
2 Tablespoon basil
1 Tablespoon parsley
1 Tablespoon black pepper
1/2 cup parmesan cheese (fresh)
1/2 cup romano cheese (fressh)
1/2 cup red wine

Directions:

1. Brown bones in olive oil
2. Brown smashed whole garlic cloves (until golden brown) remove
3. Saute' onions
Add the above ingredients to large sock pot
4. Add the remaining ingredients to stock pot (except for cheese)
5. Brin to boil and simmer with lid on for 2 hours
6. Remove lid and cook another 2 horus on simmer until desired thickness
7. Remove all bones, sewerage meat from bones and add meat back to sauce
8. Add the two cheese leave uncovered and cook from another 30 minutes
