Berry Strata Pie Recipe

1 lb. can of berries
8 oz. cream cheese, softened
3 tbsp. sugar
1 (8 oz.) can crushed pineapple
1 tbsp. milk
tsp. vanilla
1 pie crust, baked
c. sugar
2 tbsp. cornstarch
tsp. salt
1 tsp. lemon juice
c. whipping cream

1. Drain fruits but save the syrups.
2. Blend cream cheese, milk, vanilla, and the 3 tbsp. of sugar.
3. Set 2 tbsp. of pineapple aside, and stir the remainder in to the cream cheese mixture. Spread this mixture on the bottom of the prepared pie shell. Chill.
4. Combine c. sugar, cornstarch, and salt. In a saucepan combined this mixture with 1 c. of the reserved syrup and cook until thickened.
5. Stir in berries and lemon juice. Cool.
6. Pour over cream cheese layer. Chill
7. Top with whipped cream and extra pineapple.
