Drizzle of olive oil
2 pounds pork stew meat
1 onion diced
50 ounces of white or yellow hominy, mostly drained
2 jalepeno pepper diced
4 tbsp. chipotle in adobo
5 cups chicken broth
4 tbsp. chili powder
2 tbsp. cumin
2 tbsp. oregano
2 tsp garlic powder
2 tsp paprika

Turn on your Instant Pot to saute, and drizzle in some olive oil
Add in pork stew meat and onion and stir, cooking for 2-3 minutes
Add the hominy

In a electric chopper or blender combine the spices, chipolte, jalepenos, and chicken broth and blend well, add to instant pot
Put lid on and set the lid to seal
Cook on the soup/stew setting or manuel/pressure cook for 25 minutes

Garnish with raw onions, cilantro, sliced radish, lemon, and serve with corn tortias
