¼ cup unsweetened apple juice or apple cider
¼ cup apple jelly
1-½ teaspoons Dijon mustard

1. In medium nonstick skillet, combine carrots and apple juice. Bring to a boil. Reduce heat; cover and simmer 10-14 minutes or until carrots are crisp-tender.

2. Uncover skillet; cook over medium heat until liquid evaporates. Stir in jelly and mustard; cook and stir until jelly is melted and carrots are glazed.
