"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Potato balls are easy fare! Today I used about six small to medium peeled potatoes for about 15 balls. You can either grind them with a food grinder or I just use my mini food processor to grind/ chop them up into very small pieces. Added some lemon juice to them when ground to stop discoloration. Then add flour and salt to make them hold together. I used about a cup and a half of flour today. Will depend on the water content of the potatoes. Mix well. Will be sort of sticky. Moisten hands and shape into balls and drop into boiling well-salted water. Leave them alone to set up then loosen from bottom of pot so they don't stick. Cook at medium boil for 45 minutes. See easy peasy treat!!!
