Blanched almond meal or almond flour (blanched meal is better) 1 cup/100 g/3.53 oz
Finely shredded unsweetened coconut 1 cup/ 70 g/2.47 oz
Zest of 1 lemon or 3 drops of pure lemon essential oil
Lemon juice 1.5 TBS
Cream cheese 5 TBS/100 g/3.53 oz
Vanilla extract 1 tsp
Pinch of salt
Sweetener (powdered swerve or Sukrin melis or erythritol + few drops of liquid stevia) 1/3 – 1/2 cup

Directions:
Directions:
Combine together 1 cup of blanched almond meal or almond flour with 1 cup of shredded coconut, pinch of salt and sweetener with a spoon or with spatula.
Add lemon juice and lemon zest of organic lemon, vanilla essence and cream cheese.
Combine all together with spatula and make small balls with a spoon and with your hands.
Coat energy balls in shredded coconut and put them into fridge for 10-15 minutes
