6 medium potatoes
1 small finely chopped onion
1 cup celery
1 tsp salt
6 hard-cooked eggs, diced
2 eggs beaten
½ cup sugar
1 tbsp corn starch
½ cup vinegar
1 can evaporated milk
1 tsp prepared mustard
¼ cup butter
1 cup mayonnaise

Directions:
Directions:
Fill water to cover potatoes. Boil and cook 20 minutes or until easily pierced. Drain cool, peel, and dice. Toss with onion, celery, and eggs. Rest of ingredients on backside.
* while potatoes are cooking, whisk eggs (beaten), sugar, corn starch, and a pinch of salt in saucepan. Stir in vinegar, evaporated milk and prepared mustard. Cook over medium heat until thickened stirring frequently.
Remove from heat and stir in butter. Refrigerate until cool, then stir in mayonnaise. Chill overnight or for several hours.
