Vegetarian Lasagna Recipe

16 oz can tomatoes
16 oz can tomato sauce
Spinach lasagna noodles
1 pkg frozen spinach
1 cup ricotta
1 cup cottage cheese
1 lb tofu
1 cup chopped walnuts
1 lb sliced mozzarella
2 cloves garlic
cup chopped onion
1 tsp oregano
1 tsp basil
2 bay leaves
tsp rosemary
tsp nutmeg

Saute onion and garlic. When soft add to tomatoes, sauce, oregano, basil, bay leaves, and rosemary. Simmer 30 minutes. Cook and drain spinach. When cool, add to cheeses, mashed tofu, walnuts, and nutmeg. Cook noodles and drain. Layer in pan. Noodles - cheese - sauce. Top with mozzarella. Cook at 350 for 45 minutes.
