7 c. cucumbers, peeled and sliced
1 c. onion slices, rings separated
1 c. red bell pepper slices
¾ c. white vinegar
¾ c. cider vinegar
3 c. sugar
½ tbsp. canning salt
2 tsp. celery seed
1 tbsp. mustard seed

Directions:
Directions:
Combine cucumbers, onion, and red bell pepper in a large bowl. In a saucepan, bring vinegars, salt, and sugar to a boil over medium hear until sugar dissolves. Add celery and mustard seed to brine, remove from heat. Pour brine over cucumber mixture. Pack in sterile glass jars, cover with lids, keep in fridge. makes 8-9 cups.
