Cut up your carrots and celery into bite sized pieces
Prepare chicken however you desire, cube, then set aside
Sauté vegetables under they reach desired tender level
Cook rice noodles as package directed, drain and return to pot
Add vegetables to noodles
Mix rice vinegar, soy sauce, fish sauce, lime juice, peanut butter and brown sugar together with a wisk.
Measurements above are approximate. Taste sauce as you go to ensure best flavor (I tend to go heavy on the lime juice)
Once sauce is prepared to your liking, slowly pour into noodles and stir while mixing. Once you are satisfied with sauciness of dish, you are complete!
You can garnish with green onions as desired!
