Lemon Chicken Orzo Soup Recipe

2 carrots chopped
2 stalks celery chopped
1/2 small onion chopped
2 oven baked chicken breasts chopped
4 sprigs thyme
8 sprigs parsley
6 cups Chicken Broth
juice and zest of one lemon
3/4-1 cup orzo pasta
Salt & Pepper for taste
(I sometimes add fire roasted tomatoes as well)

Stove Top:

Juice of 1 lemon, 1 lemon zest, 3/4 cup orzo pasta
Drizzle a little oil into a pot and then add in onions, celery, and carrots. Cook on medium heat for about 3-5 minutes.
Once the vegetables are tender add in the chicken, herbs, and Chicken Broth.
Cover the soup and let it come to a boil, about 10-15 minutes.
Use a spoon to remove the herbs and then pour in the orzo pasta and lemon zest.

Cook the soup until pasta is fully cooked, about 7 minutes.
Pour in the lemon juice and sprinkle with some fresh chopped parsley.

Instant Pot:

Juice of 1 lemon, 1 lemon zest, 3/4 cup orzo pasta
Select Saute mode for 10 minutes. Drizzle a little oil into the instant pot and then add in onions, celery, and carrots.
Once the vegetables are tender add in the chicken, herbs, and Chicken Broth.
Place the lid on the instant pot, select high pressure manual for 6 minutes.
Use a spoon to remove the herbs and then pour in the orzo pasta and lemon zest.
