3 lbs + Veal or beef bones (get from Columbus Meats)
2 litres water
2 carrots roughly chopped
2 stalks celery roughly chopped
2 onions roughly chopped
2 cloves garlic, crushed
2 bay leaves
1 tsp whole peppercorn
2 tbsp light soy OR fish sauce
1 tbsp apple cider vinegar (substitute rice vinegar and 1/4 tsp sugar)
your favourite dried or fresh herbs (I used dried thyme)

1. Turn Instant Pot to saute "more" and wait until it says "hot", then add olive oil, and then bones. Brown each side for 3.5 minutes. You may have to do in batches
2. Pour 1/2 cup water and deglaze pot with wooden spoon
3. Pressure cook for 2 hours, then Full Natural Release (approximately 45 minutes)
4. Cool and strain in colander. Set aside to cool further.
5. Refrigerate, then skim off fat

Store in fridge for 3 - 5 days. You can freeze broth but use within year.
