4 eggs, whisked

lb. breakfast sausage,

cooked cup spinach,

chopped red bell pepper, chopped

white onion,

chopped 6 cherry tomatoes,

sliced 1 tbsp. coconut cream

salt and pepper to taste

Preheat the oven to 350F.
In a medium-sized bowl, add in all of the ingredients, stirring until well-combined.
Grease a muffin pan with coconut oil and gently pour in the egg mixture.

Cook for 20-25 minutes, or until golden.
