Ingredients: 2 1/2 cups bread flour 2 1/2 cups packed brown sugar 1 1/2 cup butter 1 teaspoon baking powder 1/2 teaspoon baking soda 2 teaspoons apple pie spice 1 teaspoon salt 1 cup buttermilk dash of vanilla 2 large eggs, beaten 1 large apple, sliced into bite size pieces

Directions:1. Mix together flour and brown sugar. 2. Add in the butter and mix until the mixture is crumbly. Cut the butter into smaller chunks to make the mixing process easier. I use my fingers when I mix but be careful because if the butter gets too hot the dough won't be as airy. 3. Set aside 1 cup of the crumbly mixture. 4. Add baking powder, baking soda, apple pie spice, and salt into the flour mixture. Mix well. 5. Make a well and add buttermilk, eggs, and vanilla. Stir until the batter is thick and shiny. 6. Fold in the sliced apple. 7. Generously spray 12-cup muffin tin and spoon wet mixture into the molds. If you like smaller muffins this can make around 18. If you like larger muffins it will make around 12. 8. Add a heaping portion of crumbly mixture on top of the muffins. 9. Bake for 25 to 30 minutes at 350 degrees or until a toothpick inserted into the center of muffins comes out clean. |
