1 tbsp oil (I usually use olive)
4 boneless, skinless chicken breast halves
1 can (10 3/4oz) cream of chicken soup
1.5 cups water
1/4 tsp each paprika and pepper
2 cups minute rice, uncooked
2 cups fresh or frozen broccoli florets

Directions:
Directions:
1. Heat oil in a skillet. Add chicken and cook until browned. Remove
2. Add soup, water, paprika and pepper to skillet. Bring to a boil
3. Stir in rice and broccoli. Top with chicken. Season with additional paprika and pepper.
4. Cover, cook on low heat 5 min or until cooked through

I found this recipe in a magazine a few years after being married and though it was a slightly healthier version of the one my mom made. Also very tasty!
