4 eggs well beaten
1 cup milk
¼ tsp salt
1 cup flour
½ cup sugar
1 tbsp cinnamon
3 tart medium apples peeled, cored and cut in ¼ wedges
4 tbsp butter

Note: we use ¼ cup sugar.

Directions:
Directions:
1. Beat eggs, milk, salt and flour until smooth.
2. Let batter rest.
3. Combine sugar and cinnamon, sprinkle over apple slices and toss to mix.
4. Generously butter 2- 9" pie pans using 2 tbsp butter for each.
5. Divide apples between the 2 pans.
6. Stir the batter and pour over the apples about 1 cup per pan.
7. Bake at 375 º for about 40 minutes until puffed and golden brown.
