Ingredients: 1/2 cup butter or margarine 1/2 cup butter flavor shortening 1 1/2 cups creamy peanut butter 1 1/2 cups brown sugar 1 Tablespoon molasses 1/3 cup milk 2 teaspoons vanilla 2 eggs 3 1/2 cups flour 1 1/2 teaspoons baking soda
Filling 1 14 ounce can sweetened condensed milk 3 cups chocolate chips 1 teaspoon vanilla

Directions:In a large mixing bowl, beat butter, shortening and peanut butter until well blended. Add sugar and beat until fluffy. Beat in molasses, milk and vanilla. Add eggs mix just until blended. Combine flour and baking soda. Slowly beat dry ingredients into peanut butter mixture. Mixing just until blended. Drop by level tablespoonfuls onto lightly greased or parchment-lined cookie sheets. Bake at 375º 6-7 minutes or until just starting to brown and set. Cool slightly on baking sheets. Then remove to wire racks to cool completely. Melt chocolate chips with sweetened condensed milk--either in a small saucepan over low heat or microwave in a glass bowl on medium heat for 2-3 minutes, checking and stirring after each minute. When melted stir in vanilla. Cool slightly. Spread a generous amount on flat side of half of the cookies. Top filling with another cookie flat side down sandwiching together. |
