3 pounds unpeeled small new potatoes
Salt to taste
1 cup mayonnaise
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon lemon pepper
1 tablespoon fresh dill or 2 to 3 teaspoons dried
3/4 cup finely chopped onion
4 hard-cooked eggs
2 tablespoons chopped dill pickle
*Salt and pepper to taste

Directions:
Directions:
Combine the potatoes and salt with enough water to cover in a saucepan and cover. Bring to a boil for minutes or until tender; drain. Cool slightly and cut into bite-size pieces

Combine the mayonnaise, vinegar, mustard, lemon pepper and dill weed in a bowl and mix well. Fold the potatoes, onion, eggs and pickle into the mayonnaise mixture. Chill, covered, for 4 to hours before serving.
