Danish Potato Soup Recipe

Large soup pot

Ham bone with some meat attached

2 quarts of water

2 potatoes peeled and diced

6 green onions sliced

3 celery stalks chopped

¼ cup chopped fresh parsley

2 cups of chopped cabbage

2 carrots sliced

3 Tablespoons of flour

1 cup of light cream

Directions:
Directions:
In soup kettle, add ham bone and water and bring to boil on medium/high heat

Reduce heat and let simmer for 1 hour or until meat separates from bone

Remove ham bone. When cool, remove meat and dice

Return ham to pot and add potatoes, onions, celery, parsley, cabbage and carrots.

Cook for 40 minutes on medium heat

Stir together flour and ¼ cup water

Slowly pour mixturer into pot stirring constantly

Bring soup to a boil and cook 2 more minutes

Reduce heat and stir in cream.

Continue to heat until soup is mixed well together
