4 heads of escarole
2 lbs of mild Italian sausage (cut in 1.5" pieces)
4 cloves of garlic chopped
29 oz can of cannellini beans
14.5 oz can of chicken broth
2 tbsp of extra virgin olive oil
Penne pasta

1. Brown sausage in oil.
2. Remove sausage, but leave sausage grease in pan.
3. Add garlic, dash of pepper, dash red pepper flakes and 1 tsp of salt.
4. Cut up escarole and add to pan and cover.
5. When escarole is cooked add beans with juice.
6. Add little over half can of chicken broth.
7. When heated up, add sausage back to pan.
8. Mix with Penne and serve.
