Roasted Asparagus Recipe

1 lb asparagus
1-2 T olive oil
1/2 tsp pink Himalayan salt
1/2 lemon
1 T capers
2 T shelled pistachio nuts
sprinkle Parmesano-Romano cheese

Directions:
Directions:
preheat oven to 425º F

To baking dish, add:
Olive oil
Salt
Then prepared asparagus (washed, fibrous ends removed, I leave them full length as opposed to cutting to bite-size)
mix asparagus to coat with oil/salt mixture
Roast for 10 minutes

Remove from oven and
add capers, nuts,
mix to coat
sprinkle cheese and squeeze lemon juice over it all

Replace in oven for 3-5 more minutes

You can put it all in for 12-15 minutes but I don't particularly like the nuts and capers cooked that much

Adjust time so asparagus has some blackened tips

My grandchildren, Aiden and Rena loved this the first time they tried it. (They were both sub-teens at the time) Even more impressive, my brother and his wife (ardent non-veggie eaters) both loved it.
