2 cups sugar
3 1/2 cups vinegar
1 1/2 cups water
1 tbsp salt
5 tbsp pickling spices
1 tbsp whole cloves

Directions:
Directions:

Wash and cook beets until skin comes off. Remove from heat and
put cold water over the beets to cool them so you can take skins off.
Cut beets in chunks to can.

Combine above ingredients and heat, stirring until sugar is dissolved.
Pack beets in jars and put vinegar mixture over them. Put lids and rings
on and seal. Cook in hot water bath for 15 minutes..
