8 chicken thighs (bone-in, or boneless)
½ cup maple syrup (preferably Grade B, now known as Grade A Dark Amber)
½ cup Dijon mustard
¼ cup fresh lemon juice
1 tbsp grated lemon rind
1 tsp cinnamon

Directions:
Directions:
Preheat oven to 375º
Grease a heavy casserole dish.
Place the chicken thighs in the casserole dish.
Combine the remaining ingredients and pour over the chicken.
Bake uncovered for 30 minutes. Baste with pan drippings and continue cooking for 20 minutes longer.
Serve with rice, noodles, or couscous.

Personal Notes:
Grade B maple syrup is now known as Grade A Dark Color/Robust Flavor. It has a much stronger flavor than regular Grade A, which basically tastes like sugar.
This is a very easy recipe to make and fills the house with a wonderful aroma.
