3 cups diced potatoes
1/4 tablespoon chopped onions
2 tablespoons chopped pickle (dill)
2 tablespoons finely sliced celery
1 teaspoon very fine chopped green pepper
2 hard cooked eggs (optional)
3/4 cup salad dressing or mayonnaise
1/4 cup sour cream
Salt to taste

FOR LARGER GROUPS:

10 lbs. diced potatoes
1-1/4 tablespoons chopped onions
10 tablespoons chopped pickle (dill)
10 tablespoons finely sliced celery
5 teaspoons very fine chopped green pepper
10 hard cooked eggs (optional)
3-3/4 cups salad dressing or mayonnaise
1-1/4 cups sour cream
Salt to taste

Directions:
Directions:
Boil 6 (2 lbs.) potatoes, skin and cube (you can leave skins on if you want). Sprinkle with 1 teaspoon salt, 1 tablespoon salad oil, 1 tablespoon vinegar. Set aside to marinate. Chill all other ingredients, When ready to serve, mix everything together. Sprinkle with paprika. Makes a quart.

Always looked forward to mom's potato salad at family gatherings. I don't know if any of us have been able to duplicate it where it tasted as great as hers but we try. Miss you mom.
