4 cups organic baby spinach
2 hard boiled eggs
2 strips bacon
½ cup sliced fresh mushrooms
⅛ cup thinly sliced red onions
¼ cup croutons
Dressing:
⅓ cup olive oil
⅛ cup balsamic vinigar
1 crushed garlic clove
Combine and let sit for at least 1 hour and remove garlic clove (optional)

Put spinach in bowl and add all ingredients except croutons. Toss with desired amount of dressing and top with croutons.

I use a jar to make the dressing in so I can shake it well. This dressing will keep for several weeks in the fridge. Just need to take it out ahead of time to let the olive oil liquify. I got this recipe years ago from my friend Cam.
