½ cup yellow corn meal
½ cup all purpose flour
1½ tsp baking powder
½ salt
1½ tsp sugar
pinch of ground pepper
¼ cup finely chopped onion
1 egg, beaten
⅓ cup milk
2 TBS Canola oil
Directions:
Directions:
Preheat oven to 425º
Blend all dry ingredients in a medium bowl then stir in egg. Add in onion. Beat egg, milk and oil in a small bowl then add to cornmeal mixture and stir until blended.

Spray mini muffin pan with non stick spray and spoon batter into cups filling ½ to ⅓ full.

Bake until golden brown, roughly 15 to 20 minutes.

Serve hot.

Recipe can be doubled.
