6-7 Large, pretty sweet potatoes with very few eyes or bruises approximately 6 pounds
1 stick of Land-o-Lakes butter
4 large eggs
2 1/2 cups of sugar
Pinch of salt
2 tbsp cinnamon
1 tbsp nutmeg
2 tbsp pure vanilla extract
1 tbsp pure lemon extract
1/2-can pet milk
4 Pet regular dish pie crusts (NOT deep dish)

Directions:
Boil potatoes for approximately 1 hour until soft to a fork. Drain water off of potatoes and peel with a fork. Put warm, peeled potatoes into a large mixing bowl. Add butter to potatoes while warm. Crack eggs in a separate bowl and gently mix. Add eggs to potato/butter mixture. Blend potatoes, butter, eggs for about 2 minutes. Add 1 cup of sugar, pinch of salt, 1 tbsp of cinnamon, 1/2 tbsp of nutmeg, 1 tablespoon of Vanilla extract, 1/2 tbsp of Lemon extract to mixture and blend for a couple of minutes. Taste mix with a clean teaspoon. Add additional remaining ingredients to taste along with 1/2 can of milk.

Sweet Potato Pie Tips:
I prefer to mix slightly thick because it gives for more fullness in each bite of pie. Eggs smooth the pie mix and are added 1 for approximately every 2 potatoes. Yep, I eyeball the thickness as I work. When mixing I like to mix the eggs then add them to the peeled potatoes. It's easier to blend them in that way and not over mix the pie mixture. I add sugar after that because I measure the other ingredients in the sugar. A pinch of salt brings out the flavor of everything else. I add twice as much Vanilla flavoring as Lemon flavoring and the same with Cinnamon & Nutmeg. Twice as much Cinnamon as Nutmeg. The rest is how I like the taste. Oh! And it has to be just a tad sweeter than I'd like the final pie to be before cooking. Cooking reduces the sweetness just a little. Hopefully that's not too crazy for you 🤣
