Ingredients: • 24 ounces Rotini pasta (Can use any macaroni style pasta. I prefer Rotini because I like the taste when the cheese gets into the curves of the noodles.) • About 4 cups of shredded mixed cheddar/jack cheese (Again I prefer Sharp, but economically I usually buy the giant bag of mild shredded cheddar at Sam’s and everyone seems to like it about the same.) • 1 ½ stick of Land O’ Lakes salted butter. I’ve tried margarine to lower the calories/cholesterol but have never been able to recreate the same flavor.) • 4 large eggs • 2 cans of Pet or Carnation evaporated milk • 1/2 teaspoon black pepper • 1/2 teaspoon salt *Everything is approximate. I recommend playing around until you get the taste/flavor that you prefer.

Directions: Cook pasta per the boiling directions on the box. Strain pasta with a colander to remove excess water. Pour warm pasta into a large mixing bowl. Drop butter into bowl with the warm pasta. Slowly fold allowing the butter to melt into the pasta. Slowly fold 2 1/2 cups of cheese into pasta while it is warm. Crack and mix 4 eggs in a small mixing bowl. After mixing fold the eggs into the pasta mix. Add salt and butter to taste. Slowly add 1-2 cans of evaporated milk into the mix. I like the milk to be just below the top of the pasta mix when done. I used 1 ½ cans in the mac n cheese we had at Jeff’s graduation lunch. Milk loosens the mixture. Too much will cause it to be watery, but it’s also possible that you may need both full cans. I’m sure that you’ll be able to tell. Pour into baking pan. Sprinkle the remainder of the cheese on top of the mixture. Bake at 350° for about an hour until the top cheese has melted and browned to your liking.
***On days when I like to be “fancy” I add a pound of raw XL shrimp from Sam’s that I cut into about 4-5 pieces each.*** |
