Shredded Beef Sandwiches Recipe

1 (3¼ pound) lean, boned chuck roast
1/3 cup white vinegar
1/2 tsp salt
1/8 tsp garlic powder
1 large onion, cut into 8 wedges
3 bay leaves
1/2 to 3/4 cup favorite barbecue sauce
10 hamburger buns, split (about 1½ ounces each)
10 thin slices reduced fat provolone cheese
sauté green peppers and onions

Trim fat from roast. Place roast and next 5 ingredients in slow-cooker. Cover with lid; cook over low-heat setting 11 hours or until roast is tender.
Remove from the slowcooker; let stand 10 minutes.
Shred with 2 forks and return to slowcooker.
Add barbecue sauce, stir well to coat all the meat with sauce.
Heat broiler. Place meat on bottom halves of the buns and top with sauted veggies and 1 slice cheese. Broil for 3 to 5 minutes or until cheese melts. Top with the bun tops and serve.
*Great with fries.
