3-4 jicamas, peeled and cut into small cubes
1 cup lime juice
1 onion, finely diced
12 green olives, pitted and diced
2-3 jalapeņos, diced (optional)
1 tbsp dried oregano
2 tbsp olive oil
Juice of 1 orange
1/2 cup mineral water
1 1/4 cup ketchup
Salt and pepper to taste

Place jicama in a glass baking dish or shallow bowl, add lime juice. (Do not put in a metal dish). Add lime juice, cover and marinate overnight in the refrigerator. Combine onion, olives, jalapeņos, cilantro, oregano, oil, orange juice, mineral water and ketchup in a medium bowl. Blend well and season with salt and pepper. Stir in jicama. Cover and refrigerate 4 hours. Serve with crackers or tortilla chips. Serves 8
