3 tomatoes, coarsely chopped
1 tbsp Lipton chicken flavor base
1 garlic clove, chopped
1 tsp salt
1 cup water
1/2 cup vegetable oil
1 1/2 cup white rice
1/2 green pepper, sliced
1/4 onion, sliced

Directions:
Directions:
Combine tomatoes, chicken base, garlic and salt in a blender and blend until smooth. Add water and blend well. Set aside. Heat oil in a large skillet over medium heat. Add rice and cook until it begins to brown, about 2-3 minutes. Add bell pepper and onion and allow to cook until softened, about 3 minutes more. Drain off excess oil. Add tomato mixture to rice and cook 2-3 minutes. Add 2 cups hot water, stirring well then cover, reduce heat and simmer 10 minutes. Then, reduce heat to low and cook until rice is tender and liquid has absorbed, about 5 to 10 minutes longer. Serves 4 to 6.
