1 pound ground round
3/4 cup chopped onion
3/4 cup chopped green pepper
1½ cups instant rice, uncooked
1½ cups beef broth
1/4 tsp salt
1/4 tsp pepper
1 (14½ ounce) can diced tomatoes, undrained
3/4 cup (3 ounces) shredded reduced-fat sharp cheddar cheese

Directions:
Directions:
Combine first 3 ingredients in a large skillet; cook over mediumhigh heat until beef is browned and vegetables are tender, stirring until beef crumbles. (Do not drain.) Add rice and next 4 ingredients. Cover, reduce heat, and simmer 5 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese; serve immediately.
