1 (6-oz) pkg broccoli au gratin rice
1½ lbs. lean ground beef
3/4 cup dry bread crumbs
2 eggs, beaten
1/3 cup fat-free milk
1/4 cup minced onion
2 cloves garlic, minced
salt and pepper to taste
1/4 lb. thinly sliced ham

Preheat oven to 350°F.
Prepare rice according to package directions. Meanwhile, in large bowl combine beef, bread crumbs, eggs, milk, onion, garlic, salt and pepper; combine well. Spread meatloaf mixture onto aluminum foil into a rectangle 10"X8". Lay ham slices over meat mixture leaving a 1-inch rim along edges. Top ham with cooked rice mixture. Roll up jellyroll style from long end. Seal edges and patch any gaps. Transfer to baking sheet and bake for 45-50 minutes. Let stand 10 minutes before slicing.
