1-1/2 Cups Cake Flour or 1-1/4 Cups All Purpose Flour
1 Cup Sugar
1-1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/3 Cup Shortening
3/4 Cup Milk
1 Egg
1 Teaspoon Vanilla

For Topping.....2 Tablespoons Softened Butter
1/3 Cup Brown Sugar Packed
1 Tablespoon Milk
1/2 Cup Finely Chopped Nuts

Mix all ingredients together

For cake....Measure all ingredients into a large bowl. Blend 1/2 minute on low speed scraping bowl constantly. Beat 3 minutes on high speed scraping bowl occasionally. Pour into greased 8 or 9 inch pan. Bake 35-40 minutes at 350 degrees. Test with toothpick in center of cake. Toothpick should come out clean.

As soon as cake comes out of the oven carefully spread the topping mixture on top. Switch oven to broil and place cake back in about 5 inches from heat. Broil until topping bubbles and browns slightly. (Watch carefully...Mixture burns easily)

Double topping recipe for a 9 x 13 inch cake...Here's a little hint...If using a glass pan for this or any cake you make lower the temperature by 25 degrees.

Here's another really good topping for a 9 x 13 inch cake. Mix 1 package of softened cream cheese with a can of crushed pineapple...drained well. Spread on top of cooled cake. Whip 1/2 pint of heavy cream and layer that on top of the pineapple mixture. Sprinkle with finely chopped walnuts.
