2 medium cucumbers, peeled and halved lengthwise
1 tsp. salt
2 cloves garlic, crushed
1 1/2 tbsp. white wine vinegar
1 tbsp. olive oil
2 cups plain yogurt

Directions:
Directions:
Scrape out centres of cucumbers, discarding seeds. Coarsely grate the cucumbers into a colander and sprinkle with the salt. Allow to drain for 30 minutes.

Meanwhile, combine garlic, vinegar and olive oil in a mixing bowl. Let marinate while cucumbers are draining. Squeeze cucumbers as dry as possible and blot on paper towels. transfer cucumbers to bowl with garlic mixture. Add yogurt and stir.

Use as spread, dip or sandwich topping. It is best served with pita bread which has been toasted and cut into six or eight wedges.
