1 lb boneless lean pork shoulder, well trimmed
½ cup ketchup
2 tbsp lemon juice
2 tbsp brown sugar
1 tsp reduced sodium soy sauce
1 tsp minced onion
4 small onions, halved
1 green pepper, cut into wedges
1 tomato cut into wedges, or 8 cherry tomatoes
1 15-oz can whole potatoes

To prepare marinade, combine ketchup, lemon juice, brown sugar, soy sauce and minced onion in a bowl. Cube pork and marinate for at least 30 minutes. Remove meat and thread onto four skewers along with onion, pepper, tomato and potatoes. Broil or grill for 5 to 7 minutes on each side. While kabobs are cooking, transfer leftover marinade to saucepan and bring to a boil. Reduce to simmer. Pour marinade over kabobs just before serving.
