4 slices of cooked bacon or about 1/2 cup bacon bits
1 lb ground beef
1/2 med green pepper diced
1/2 red pepper diced
1 med. jalapeno diced (finely chopped)
1 tbsp chili powder
1 tsp cumin
1 tsp oregano
3/4 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp instant coffee granules (this is optional but does give it authentic cowboy/shepards pie taste)
salt and pepper to taste
1 cup red pasta sauce ( RAO's brand* low carb version) any other brand if not low carb is ok
2 large eggs

Topping
10 oz mashed (cauliflower if low carb) potatoes if not low carb
4 tbsp chicken broth
2 1/2 oz shredded cheddar cheese
3 tbsp butter
3 tbsp parmesan cheese
2 tbsp ( Heavy shipping cream if low carb) regular Milk if not low carb
Mix together and whip like mashed potatoes

preheat oven 350º
If cooking fresh bacon, cook and reserve grease to saute peppers in. If using already prepared bacon bits, you will need to add a little olive oil and saute the peppers. Add ground beef. Once ground beef is cooked add all the spices and the pasta sauce. Remove from heat and cool. Once cooled, add the beaten eggs.

spread the meat mix into 9 x13 pan then spread the potato or cauliflower mix on top.
Bake for 30-35 minutes

I will sometimes add some additional bacon bits to the potato/cauliflower topping to add texture and additional flavor.

This dish is easy to convert to low carb by substituting cauliflower for potatoes.

Also, once it is cooled, you can cut into serving sizes and freeze for easy prepared meals. I will vacuum seal and boil the frozen bags until thawed and ready to serve!
