4 to 6 lbs of tripe rinse well. Cut into bite size pieces and put into stock pot with enough water to cover tripe. Boil for approx .1 to 2 hours. Add. ; approx salt to taste. ....approx 3 T cumin. ...3 T garlic powder... 4 to 5 T of chili powder. 1 onion diced...1 #10 can of hominy continue cooking until tripe is tender maybe another hour. You can always add more seaonings as you cook. it. 1 to 2 T oregano.
