1 head Cauliflower, cut into florets
1 medium Onion, sliced
4 sprigs Thyme (optional)
4 cloves Garlic, unpeeled
3 Tablespoons Olive Oil
Salt/Pepper
1/2 cup Parmesan Cheese

Directions:
Directions:
Preheat Oven to 425

In a large mixing bowl, combine Cauliflower with Onion, Thyme, Garlic and Oil, season with Salt/Pepper. Spread as evenly as possible on large rimmed baking sheet.

Roast, tossing occasionally, until almost tender, 35-40 minutes. Sprinkle with Parmesan, toss again and continue roasting until Cauliflower is tender, 10-12 minutes longer.

*** I found the first time I made this that it was done after 35 minutes total (25 + 10). Depends on your oven.

I am not a big fan of Thyme, might want to experiment with other herbs if so inclined.
