2-3 ripe bananas, peeled
1/3 cup melted butter
1 cup sugar ( can use less down to 1/2 cup)
1 egg beaten
1 tsp vanilla extract
1 tsp baking soda
pinch of salt
1 1/2 cups all purpose flour

Directions:
Directions:
Preheat oven to 350º (175º C) butter or spray a 4x8 loaf pan

Mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.

Mix in baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Pour batter into prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes. (check at 50 minutes by inserting a toothpick or flat knife in the middle, if it comes out clean, it is done).
