1 lb. top round steak
salt
Pepper
Liquid smoke

Directions:
Remove and discard all fat. Freeze round steaks till icy cut in very thin strips, cutting across the meat grain for crispy jerky and with the grown for chewy jerky. Place Beef strips in local or crocks in 1/2" thick layer sprinkle with salt, pepper and liquid smoke. repeat layers will all beef is used. Weight meat with plate on heavy object; cover and refrigerate overnight. Drain and pat strips dry with paper towel. Arrange strips on rack in shallow baking pan. bake in 250º F oven for 3 1/2 to 4 hours till desired dryness. Cool sore in airtight plastic bags or jar with tight fitting lid in in refrigerator for at cool room temperature until used makes 8 to 9 oz of jerky
