6-7 cups kale, chopped
⅔ cup pitted dates, chopped
2-3 large sweet potatoes
1 large Vidalia onion sliced thin and quartered
2 tbsp. olive oil
2 tbsp. maple syrup

Dressing
¼ apple cider vinegar
2 tbsp. maple syrup
1 tsp. cinammon
½ tsp. ginger
½ tsp. allspice
½ tsp. chili powder
salt & pepper

Directions:
Directions:
Toss sweet potatoes & onions with 2 tbsp. olive oil & 2 tbsp. maple syrup. Roast mixture at 450º for 25-30 minutes until onions are carmelized. Set aside to cool. Combine all ingredients for dressing and toss with sweet potatoes, kale & dates.Refrigerate several hours or overnight to marinate.
