4 medium-size Potatoes
6 hard cooked Eggs
1 tsp. Dry Mustard
1/2 tsp. Salt and a Dash of Pepper
1 tsp. prepared Brown Mustard (Gulden is preferred)
1 bunch Green Onions
6 slices Bacon
Vinegar

Peel potatoes and cut into cubes. Cook in salted water. Drain. Cover to keep hot. Hard cook the eggs. Cut in half lengthwise and scoop out the yolks. Mash yolks with a fork. Add seasonings to yolks. Chop egg whites and add to hot potatoes. Slice green onions and add to the hot potatoes. Fry bacon until crisp. Remove from pan and crumble. Add to hot potatoes.

Measure bacon fat and add an equal amount of vinegar to it. Heat bacon fat/vinegar mixture. Add seasoned egg yolks. Stir until thickened slightly. Pour bacon-vinegar dressing over hot potatoes, chopped egg whites, crumbled bacon and green onions. Mix well and serve. Serves 6. This is especially good for a picnic because you do not have to worry about it spoiling. Can also be served chilled, if desired.

This potato salad she served only at her home on our rare visits there. Besides being very tasty, it is a wonderful dish to take to a picnic because you will not have to worry about refrigerating it.
